Bring the soup in the pot to a boil over high heat, turn to medium high heat, open the lid and cook for about 25 minutes until the soup is slightly dry. Add sesame oil, pour the thick soup over the duck and serve.
The fish head casserole is simpler. Place dried shiitake mushrooms in a bowl and soak in cold water for at least 20 minutes, until soaked.
Remove the shiitake mushrooms from the water, squeeze out the water, remove the stalks, cut into thin slices, and set aside.
Cut the fish head in half with a sharp knife and wash. Then mix the fish head with salt, ginger juice, and white pepper in a bowl, stir well, and marinate.
Take the frying pan, heat the vegetable oil to 170 degrees Celsius, lightly coat the fish head with cornstarch, put it in boiling oil and fry for six to seven minutes until golden. Remove the fish head from the oil pan with a slotted spoon, and put it on kitchen paper to drain the oil.
Put the whole garlic into the oil pan, fry on low heat for about 2 minutes until slightly yellow, remove and set aside.
Then put the old tofu cubes into the oil pan, fry for three to four minutes until slightly yellow, remove and set aside. Blanch Chinese cabbage for 2 minutes, drain and set aside.
Combine shredded pork, salt, cornstarch, and vegetable oil in a bowl.
Pour vegetable oil into a casserole, heat it over medium heat, add sliced ginger, shiitake mushrooms, garlic, shredded pork, and bean paste, and stir-fry for four to five minutes. Pour in the chicken broth, add the boiled Chinese cabbage, put the fish head on the Chinese cabbage, add Shaoxing wine and light soy sauce, bring to a boil, and continue to cook on high heat for 10 minutes. Add tofu, mung bean vermicelli and scallion, turn to medium heat, cover and simmer for a while. Toss in sesame oil and serve in a casserole.
